Ingredients:
1 cup quinoa pasta
1 can organic coconut milk
1 tablespoon coconut oil
2 garlic cloves (minced)
1 tablespoon garlic (grated)
1/2 yellow onion (diced)
1/2 teaspoon paprika
dash of cinnamon
2 1/2 tablespoons curry powder
dash of Himalayan salt
2 tablespoons coconut aminos (raw)
11/2 tablespoons maple syrup (pure)

Direction:
1. Boil water in a pot.
2. Toss quinoa pasta in the boiling water.
3. Stir consistently.
4. Heat and melt coconut oil in a separate pot.
5. Spread the oil evenly.
6. Add minced garlic and onion, and sauté.
7. Add coconut milk, followed by curry powder, coconut aminos, cinnamon, maple syrup, garlic, and salt.
8. Stir to combine all ingredients. Remove from heat after 3 minutes.
9. Check the pasta. Remove from heat if it’s tender. Transfer into a serving bowl.
10. Pour coconut curry over the pasta, and serve.
